Recipe Review: Sweet Pork Burrito Bowls

This is really kind of a review of a couple of different recipes put into one to make the burrito bowls (ok…it’s really more of a plate)
Slow Cooker Sweet Pork Tenderloin
Crisp Cucumber Salsa

After making the pork and cucumber salsa here’s the other toppings we used:
white rice with cilantro
black beans
guacamole
salsa
sour cream
cheese
tomatoes
green onion

So what did the family think?  The score averaged 9.5!  The kids loved it.  The only complaint my daughter had was she thought the pork was maybe a little too sweet.  I happened to like the sweetness that it added.  This was a great family meal and the best part…there was a ton leftover for tomorrow night!

Strawberry Spinach Salad {with poppy seed dressing}

strawberry spinach saladThis is one of my FAVORITE salad recipes of all time.  I got this recipe from a family friend and it has been my go-to recipe for years.  In fact I make it so much that I’m always getting requests to bring it to things and it’s been nicknamed the “MarKay Salad” (wish I could take credit for it!)  The dressing is out of this world yummy (don’t let the green onion scare you!) It’s perfect for a summer BBQ…. or really anything!

{Recipe Review} Grilled Caprese Chicken

So I wish I was kitchen savvy enough that I could come up with my own delicious recipes….but since I’m not I will just share the best ones that I’ve made from Pinterest that are share-worthy.

GRILLED CHICKEN CAPRESE

This recipe had me at Caprese.  I love ANYTHING with mozzarella, tomato and basil.  Such a beautiful combination… It’s a great meal for a summer day to put on the grill and maybe grab some fresh tomato and basil from the garden.  YUM.  It’s also a beautiful dish and looks more complex than it really is to make.

Here’s what my family rated it: 9,9,10,7 for an average of 8.75 (my daughter didn’t like the balsamic vinegar it uses)
