Strawberry Spinach Salad {with poppy seed dressing}

strawberry spinach saladThis is one of my FAVORITE salad recipes of all time.  I got this recipe from a family friend and it has been my go-to recipe for years.  In fact I make it so much that I’m always getting requests to bring it to things and it’s been nicknamed the “MarKay Salad” (wish I could take credit for it!)  The dressing is out of this world yummy (don’t let the green onion scare you!) It’s perfect for a summer BBQ…. or really anything!

Ingredients:

1 bag baby spinach (12-14 oz.)

1 head red leaf lettuce

1/2 red onion sliced thin

1-2 c. crumbled bacon pieces

1-2 c. swiss cheese

1 lb. strawberries sliced

The AMAZING dressing:

1 c. canola oil

1 1/4 c. sugar

2 tsp. mustard

1 tsp. salt

2/3 c. vinegar

1/2 bunch green onion (chop each onion into 3rds)

Mix together in blender.  After you have blended all the ingredients stir in 2 Tbsp. of poppy seeds.  DO NOT MIX POPPY SEEDS IN THE BLENDER (or your dressing will turn black!)
